Ingredients

  • 1 Cup Almond Flour
  • 1 Cup All Purpose Flour
  • 1 Cup Rolled Oats
  • ¼ Cup Hemp Seeds
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • ¼ tsp Fine Sea Salt
  • 2 Eggs whisked
  • ½ Cup Vanilla Greek Yogurt
  • 1 tsp Vanilla Extract
  • ¼ Cup Pure Maple Syrup
  • ¼ Cup Extra Virgin Olive Oil
  • 2 Zest of Oranges
  • 1 Juice of 1-2 Oranges (¼ Cup Fresh Juice)
  • 1 Mashed Banana
  • ½ Cup Mini Chocolate Chips optional

Instructions

  • Preheat Oven to 350℉. Prepare a muffin tin, lining it with muffins liners, and spraying liners with baking spray or olive oil spray.
  • Whisk all the dry ingredients together in a separate mixing bowl.
  • Combine the wet ingredients in a separate bowl - 2 whisked eggs, mashed banana, Greek yogurt, vanilla, olive oil, maple syrup, juice of oranges and zest of oranges.
  • Slowly mix in the dry ingredients into the wet ingredients until incorporated. Fold in optional chocolate chips at the end.
  • Bake muffins in pre-heated oven for 20 minutes. Allow to cool for 5 minutes before moving to a cooling rack. Enjoy!
