Garden Gazpacho

Equipment

  • 1 High Speed Blender

Ingredients

  • 1 Cucumber coarsely chopped, optional skin removed
  • 1 Clove Garlic
  • ½ Onion red or white, chopped
  • 1 Green Bell Pepper coarsely chopped
  • 1 Red Bell Pepper coarsely chopped
  • 3 Vine Ripened Tomatoes chopped
  • 1 tsp Kosher Salt
  • ½ tsp Freshly Ground Black Pepper
  • 3 tbsp Extra Virgin Olive Oil
  • 2 tbsp White Wine Vinegar or Sherry Vinegar
  • 2 Pieces Stale Bread French or Italian works great

Instructions

  • Blend chopped cucumber, garlic and onion until a smooth consistency is achieved.
  • Add chopped peppers and blend again until smooth.
  • Add chopped tomatoes and blend until smooth.
  • Season the soup with the salt, pepper, olive oil and vinegar. Blend to incorporate.
  • Slice or tear 2 pieces of stale bread into small pieces and add to the blender. Blend on high until smooth. If a smoother consistency is preferred, pass the soup through strainer or sieve to remove any clumps. Enjoy!
