Lemon Miso Dressing
This bright and flavorful Lemon Miso Dressing comes together in less than 5 minutes and uses just 6 simple ingredients. Perfect for tossing in salads, dressing roasted vegetables or even using as a marinade for chicken.
Bye Bye Bottled Dressings
I gave up on most bottled salad dressings some time ago. There are a few I enjoy and those that I do, I can fully appreciate the convenience of having a bottled dressing ready-at-hand. However, I’ve learned to really appreciate making my own salad dressing. I find it’s just as convenient to know how to prepare a simple vinaigrette. The know-how is key.
This Lemon Miso Dressing is prepared using a few simple ingredients and can be whipped up in 5 minutes! A few pantry staples, and fresh lemon and garlic is all it takes. The flavor is punchy and bright and pairs perfectly with most salads, vegetables and bowls. I’ve even used this as a chicken marinade and loved the outcome!
Simple Ingredients
Extra Virgin Olive Oil
Fresh Lemon Juice
White Miso
2 Cloves Minced Garlic
Red Wine Vinegar
Salt and Pepper
That is it! Only 5 ingredients, plus salt and pepper! And this dressing can be stored in the fridge, for a week, and then just warmed on the kitchen counter to bring the oil back to a liquid state. Sooo easy!
Facts about Miso
Miso is a soybean paste produced from cooked soybeans, fermented grain (typically rice or barley) and salt. A mold causes the grain to ferment. (This same mold is used to make soy sauce and even sake.)
Miso is complex in flavor. It is salty, almost briny/sour yet also lends an umami flavor. Eating fermented foods, such as miso, may:
Improve Digestion
Support a Healthy Immune System
May Reduce the Risk of Certain Cancers
Miso does have a high sodium content, so a little goes a long way. And if you’re on reduced-sodium diet, you’ll want to consider this.
The simplest way to enjoy this dressing is to simply toss it onto fresh kale. Add a few nuts or dried fruit, and you have a beautiful salad. This is also delicious as a marinade, drizzled over fish, or even as a dressing for brussels sprouts. The possibilities are many. I’d love to hear how you used this dressing in the comments below!
