Easy Summer Breakfast

Overnight Oats are a fantastic breakfast in the summer months. Aside from being grab-and-go ready once prepped, I appreciate that there is no cooking involved. I also love that breakfast is cold. Finishing a sweaty morning workout and following it up with a cool, healthy breakfast feels ideal when it’s toasty outside! This Banana Cream Pie Overnight Oats recipe only tastes indulgent! It is a perfect summer breakfast.

Basic Overnight Oats Recipe

The basic recipe for Overnight Oats is:

Milk of preference

Ingredients for Banana Cream Pie Overnight Oats

For this particular recipe, I use:

Oats

Chia Seeds

Walnut Pieces

Unsweetened Coconut Flakes

Plain Nonfat Greek Yogurt

Coconut Milk

Vanilla

Honey

Maple Syrup

Bananas

Coconut Chips

Graham Crackers, crushed

Overnight Oats Dry Ingredients

I throw all my ingredients in a bowl, except for the fresh banana and those that are a topping.

Overnight Oats with Wet Ingredients

Then I slice a fresh banana and gently stir to combine with the other ingredients. I divide the mixture equally into 4 serving jars. This step is not necessary, but it makes the “grab-and-go” element of overnight oats a bit easier. Especially if I’m running out the door and want to take breakfast with me.

Each serving is topped with coconut chips. These will give the recipe a fun coconut crunch to an otherwise creamy breakfast.

Overnight Oats in Mason Jars

Refrigerate

I refrigerate the oats for a couple of hours, or overnight.

Top with Fresh Banana Slices and Graham Cracker “Crust”

Once ready to eat, I slice a fresh banana on the top of the oats, and add the crumbled graham cracker “crust.”

  • 1 mixing bowl large
  • 4 Mason Jars or other serving bowls, optional

Ingredients

  • 1 Cup Plain Greek Yogurt
  • 1 Cup Coconut Milk
  • ½ Cup Oats old fashioned
  • ¼ Cup Chia Seeds
  • 1 tsp Vanilla Extract
  • 1 tbsp Honey
  • 1 tbsp Maple Syrup
  • ¼ Cup Unsweetened Coconut Flakes
  • ¼ Cup Walnut Pieces
  • 1-2 Bananas, sliced
  • ¼ Cup Coconut Chips topping, sprinkled
  • 2 Crushed Graham Crackers topping, sprinkled

Instructions

  • Combine the yogurt, coconut milk, oats, chia seeds, vanilla, honey, maple syrup, unsweetened coconut flakes and walnut pieces in a large bowl and stir to combine.
  • Gently stir in 1 sliced banana.
  • Spoon into individual serving containers or mason jars, if desired. Or leave in bowl if individual portioning is not desired.
  • Top with coconut chips.
  • Refrigerate for 2 hours or overnight.
  • When ready to eat, add freshly sliced banana and crushed graham crackers to each serving.
