Why Make Salad Dressing

Homemade salad dressing can be really simple to make. It is cost-effective, tastes fresh and does not contain preservatives that some bottled dressings do. Typically, I whip up a batch of fresh salad dressing and keep it in my fridge or pantry for a month (depending upon the ingredients in the particular dressing). This Three Ingredient Balsamic Vinaigrette is one of my favorites. It is so easy to prepare and pairs well with so many salad ingredients. I urge you to give it a try!

How to Store Homemade Salad Dressing

The Dijon Mustard in this dressing is the emulsifier in this recipe and necessitates refrigeration. In the fridge I can keep it for up to a month. Then, whenever I need dressing for a salad, I conveniently open my fridge and pull out this Three Ingredient Balsamic Vinaigrette, allow it to warm on the counter for a few minutes (or warm in the microwave for a few seconds). This returns the oil to a liquid state.

The general rule-of-thumb I follow when preparing homemade dressing is this: if it contains fresh herbs, or refrigerated ingredients (like mustard, dairy products, fresh lemon juice, mayonnaise, egg, etc.) I need to refrigerate it. However, if the dressing contains dried spices, oil, vinegar, I can store it at room temperature in my pantry or cabinet.

Equipment

  • 1 Mason Jar or Dressing Bottle

Ingredients

  • cup Extra Virgin Olive Oil
  • ¼ cup Balsamic Vinegar
  • 1 tbsp Dijon Mustard

Instructions

  • Combine the oil, vinegar and mustard in a jar or bottle with a lid. Shake vigorously until dressing emulsifies.
  • Dressing may be refrigerated for up to a month. If oil solidifies simply leave on the countertop for a few minutes to warm, or microwave for a few seconds.
