Easy Mediterranean Rainbow Salad
Colorful Sweet Peppers, Crunchy Cucumbers, Sharp Radishes and Herby Chives are quickly tossed in a simple dressing to create this Easy Mediterranean Rainbow Salad.
Fresh and Simple
This Easy Mediterranean Rainbow Salad is so fresh and colorful it is hard to resist tasting as you prepare it. Simple, whole ingredients shine in this recipe, with little fuss and very little work.. A few chops and snips and a drizzle of oil and vinegar and this salad is ready to serve. This is the kind of salad I love!
This Easy Mediterranean Rainbow Salad was made to finish my Greek Burgers. But it is also delicious on its own or as a side dish. Great for picnics or potlucks because the dressing does not need refrigeration. Without any greens to wilt, and starring veggies that are firm and crunchy, this salad can also be dressed without worry of ingredients turning soggy, wilted or limp, for up to 12 hours.
Rainbow Radishes
Radishes are a root vegetable and part of the mustard family (its where they get their sharpness from). Rich in water, fiber, vitamins and minerals they are a great addition to your diet. Most commonly found in grocery stores is the red radish, but I found these rainbow beauties at Trader Joes and couldn’t resist. My shopping trip actually inspired this salad! Ha!
Don’t shy away from this recipe because of the typical spiciness of a radish. The acid in the dressing actually tones down the tang of this veg.
Nutrient Rich Radishes
Radishes are rich in several vitamins and minerals. I will highlight a couple of nutrients.
Some benefits of Radishes:
Vitamin C – Plays an important role in immune function. Radishes
Folate – Important for basic cell function. Helps to form the RNA and DNA that instruct our cells on what to do.
Easy Mediterranean Rainbow Salad
Equipment
- 1 Large Mixing Bowl
- 1 Serving Bowl
Ingredients
- 1½ Cups Mini Bell Peppers stems removed, seeded, sliced
- 1 Cup Persian Cucumbers sliced
- ¾ Cup Radishes root end removed, sliced
- ⅛ Cup Chives snipped into small pieces
- 1 tbsp White Wine Vinegar
- 2 tbsp Extra Virgin Olive Oil
- Salt and Pepper to taste
Instructions
- Add all vegetables to the both.
- Pour vinegar and olive oil over the top of the salad.
- Season with Salt and Pepper to taste. Toss all ingredients. Adjust seasoning as needed. Enjoy!
